Abstract:
Microbiological research on some bacteriological laboratory investigations aims at a study on the determination
of microbiological indices in meat assortments from young animals sold in the halls of a market in Chisinau. A higher
number of colonies was determined in the lamb meat samples in the investigations in hall 1, namely 3 microbial
colonies, compared to the veal and rabbit meat assortments where the number of colonies determined in the veal
samples a number of 4 colonies and in the rabbit meat a number of 3 colonies. In the veal and rabbit meat samples the
number of microbial colonies constituted 1-2 microbial colonies. The results obtained concern the bacterial indices on
microscopic smears, of the microbial colonies obtained as a result of the passages according to the comparative aspects
regarding the standards on food products. The microbiological indices obtained fall into the category of assessment
norms, concluding on the quality of the sausages investigated in the sales halls.
