Abstract:
A new type of cow’s milk has appeared on the market. This product, called A2 type milk, is of interest to both, consumers
and researchers. There is more and more evidence that A2 type milk has possible health benefits and for this reason, the
researchers surrounding the product. The A1 type milk (A1 type beta-casein), generally, was found in the milk of breeds
from North European origins such as Friesian, Ayrshire, British Shorthon, and Holstein whereas the A2 type milk was
found in cows of Guernsey, Jersey, and the Channel Islands and Southern French breeds. Charolaise and Limousin breeds
in Europe and Zebu cattle in Africa and Asia were also producing A2-type milk. Thus, this study proposed to review the
physical and technological properties of A2 milk in dairy processing units.
